It’s perfect for a post-workout bite, after-school snack, or late-night sweet fix. Plus, it’s T1D-friendly, with healthy fats, fiber, and no blood sugar surprises when portioned mindfully.

Directions

  1. In a blender or food processor, blend cottage cheese, maple syrup, and vanilla until smooth and creamy.

  2. Transfer the mixture to a mixing bowl.

  3. Stir in the almond flour and protein powder until fully combined. The texture should resemble cookie dough — thick but scoopable.

  4. Fold in the chocolate chips.

  5. Store in an airtight container in the fridge for up to 5 days.
